Food diary 21st March 2021 (french toast, pak choi and fish stir fry and gnocchi w/ chicken & leek)

I was hungover this morning (beer and vodka=pain) but after a week of staying up late and eating gallons of ice cream I felt like it was time to indulge in some actual nutrients.


FRENCH TOAST

3 small slices of seeded brown bread

Half pot yogurt leftovers

spoon of mascarpone

Couple of strawberries

2 eggs mixed with a dash of soya milk

cinnamon

honey

icing sugar and seeds for prettiness


Pak choi stir fry and cod

Adapted from one of Joe Wicks' Lean in 15 recipes- best thing I've eaten in ages

-1 frozen white fish (20 mins in oven at 200c, turning halfway and giving it 5 mins under the grill) seasoned with salt and pepper and some oil

-1 pak choi stir fried in coconut oil with 2 spring onions

-added a teaspoon of sesame oil and chilli to serve. And some soy sauce and seeds

-Would be even better with cashew nuts...


GNOCCHI WITH CHICKEN AND LEEK

-Stir fried 1/4 leek in coconut oil with spring onion

-Added chicken and mushrooms to the fry

-Put on carrots then gnocchi to boil (don't overdo the gnocchi next time)

-Spinach, seasoning and parsley to serve. Yum.
