Turmeric chicken with spinach satay

Looks like the dog's dinner but tasted like the gods' dinner


Adapted from recipe of the same name from Joe Wicks' Lean in 15

1 chicken breast

half a lemon

1 teaspoon of turmeric

combine and leave to sit in a bowl.

1 red chilli

2 spring onions

1 garlic clove

Softened in a pan for a few minutes with coconut oil.

50 ml of water

1 spoon of peanut butter

Gently combined in the pan on a low heat

Add a couple of handfuls of spinach (use more next time, ran out) until wilted.

Remove from the heat.

Add 1teaspoon of sesame oil

1 spoon of light soy sauce

Combine and set to the side.

Cook the marinated chicken for about 10 mins until cooked through.

Serve: I added cous-cous (all I had.) Would be lush with potato wedgies or cauliflower rice.
